Aha! The teacher in me would

Aha! The teacher in me would have been clearer about it but I finally got it. When you're in "Design" window and click on "Add Grain" it wants you to add a grain to your recipe from its database of grains. When you're in "Ingredients," you click on "Grains," and then click on the very same thing "Add Grain," it wants you to add a grain to its database of grains. Confusing.

I'm a bit irked, though, that BeerSmith (a) doesn't have some grains/fermentables; and (b) doesn't even allow you to add ingredients to its database! What did I pay $30 for?

ibrewmaster also does not have carastan. It does have Simpsons caramalt, which I read is the same thing. Maybe check that? It's what I added for this recipe.

I brewed this yesterday with

I brewed this yesterday with help from Niilo and had great success. We pulled off 85% brewhouse efficiency finishing up with 5 gallons at 1.112! I put a blowoff on and am praying it doesn't explode so if anyone is at the brewhouse today please check on it. This brew was tons of fun!

I brewed my batch today with

I brewed my batch today with tremendous help from Niilo. We ended up collecting 9 gallons of wort (after the initial 2 for reducing) and boiled for quite some time to get the target volume and gravity. We ended up at 5 gallons in the fermentor and an OG of 1.097. I didn't add my hops until the total volume was around 6 gallons, so my 60 minutes of hopping/boiling would land me at the final volume. My advice for this beer is to take your time sparging. Draining your tun VERY slow and collect the running's until your grains are thoroughly rinsed. You can always boil longer to reduce your volume and get a high gravity and good efficiency. Definitely a long and tough brew session, but very fun none the less.

update:  A couple of us

update:  A couple of us brewed this yesterday...here are a couple things to note.

- We used a 1.25qt per pound grist ratio for the mash.  This equated to 5.5 gallongs of water at 158.  Make sure that you drain your tun slowly to get the best efficiency as possible. 

- Add the treacle once your boil starts....You'll want to throw a little water into the microwave and heat in a small bowl....then pull it out and add the can to allow the treacle to loosen up a little.  This stuff is like tar.  We also used a glove and spooned some of the wort into the can...and shook it to make sure we got as much of the treacle into the boil as we could.

- For the starter....I just used two growlers...instead of trying to fit it all into one.  Worked a lot easier.  Just make a starter, 1L....so 100 grams of DME and 1L of water into each growler.  Each of the 2 growler gets a packet of liquid yeast.  This is the best way to do it i think.  This is also very important....this is a big beer with very complex sugars (created from a high mash temp, caramelization, and addition of treacle).

-  Make sure you give your final brew good amount of oxygen before pitching the yeast...same reason as above.

-  the amount of wort collected ranged for the 3 of use who brewed yesterday...I think it was largely dependant on the mash tun used.  But, all of use were able to collect atleast 2 gallons to do our reduction.

-  I was able to collect 3 gallons from my first run....two of it was reduced....so 1.5 gallons.  My next infussion was 4.5 gallons as the sparge.  You should target 170...so I striked at about 185....YOUR SYSTEM WILL VARY...  In the end...my second run collected 5 gallons...putting a total of 6.5 gallons into the kettle.  Again....please read the bold above...  These are my results and general guidelines...your system may be different...so keep that in mind.

-  Go with a blow off tube for this one...this brew is very high gravity and will be working too hard for an airlock.

Please try to pickup and pay for your package at this Sundays meeting. If do not receive payment and/or have not heard from you a couple days after the meeting I will be offering the spot up to other people.

I am also going to change the brew by date to Feb 15 since it took a while for everything to come in.

Good news everything is in...I'll start to split things up.  I also, just opened the box from Farm House Brewing Supply and was surprised with a bunch of extra hops that John threw in the box (put CHAOS as order name).  I'll be bring them over to the brew house.

If anyone wants to brew a batch to put on tap in the brew house...you're welcome to some free hops.

Reducing will create some kettle caramelizing.  This is a traditional way of introducing some complex sugars into the brew.  When I researched this style of beer, I wanted to be as true as possible to traditional methods...in hopes of a traditional tasting brew.

I have some MO left..

As far as the reducing goes...do everything you normally would do.  The only change, take 2 gallons from the beginning of your running and put it in a separate pot.  Begin to reduce the 2 gallons until it is about 2 quarts.  Doing this in a separate pot will allow you to continue your normal collection/boil.

When I get some time, I'll try to post more accurate details.  Also, the hops came in...just waiting on the trecale.  Once everything comes in, I'll split it up and let everyone know.

Can you go into more detail about reducing the first 2 gallons of runoff? I'm assuming I will collect 2 gallons, stop lautering, reduce, then finish collecting my first runnings and proceeding as normal? I don't know how else I could accurately control the volume unless I did it that way. Also, what is the purpose of reducing the first 2 gallons?

also, are you still offering up any of your MO for sale?

Ok...I pulled the trigger and ordered everything tonight.  The total is $17 for treacle, specialty grains, and hops.  The only thing you will need to obtain is 2 packs of yeast (WLP013, WLP002, or US-04 --- or --- repitch the correct amount of yeast) and 16 pounds of Marris Otter.

Please read the instructions for making a starter...this is an extremely big beer and having a correctly sized healthy yeast pitch is essential for making this beer turn out well.

A few people ordered Marris Otter malt in the group grain buy.  I believe Kyle, Jim, and Myself have some...if you ask kindly one of them may be willing to sell you some.

This is a big beer. Depending on what your efficiency is, you should be between 1.095 - 1.120. (If I did my math correct). When brewing shoot for 1.110. (That assumes your efficiency is giving u about 30 points per pound of base grain)

I'll post additional details soon regarding exact steps for brewing this beer. Again, remembering that everyones system and equipment may produce a range for efficiency.

I'm interested in purchasing hops, treacle, and specialty grains in bulk.  I think we should combine orders with some of the other barrels that need to order ingredients in order to save money.  That being said, I don't want to lose too much time waiting for everyone to get their shit together.

This recipe calls for a pound

This recipe calls for a pound of trecale.  Here is a link: 1 # Treacle  Please do not use any substitutes...I'm trying to keep this as close to the classic style as possible.  The price is about 8 bucks + shipping.  You may be able to find this at a specialty grocer too...not sure what the price is.  Make sure that it is black treacle. 

I realize that this is probably going to be a slightly expensive brew for everyone to make...large grain bill + specialty ingredients.  If anyone doesn't feel comfortable making this, let me know.  I will open up a slot if you decide that this is too much.

If I haven't heard from you since updating with the details....please let me know that you are willing to brew. Also, as dan mentioned, we are slated for doing 10gal. Both dan and I would rather do 5 so others can also be invovled.

We prob need a total of 60 gallons...that will leave an extra 8 gallons in case one or two are not up to par (infected or the like).
