Ingredients: 

20# 2-Row Malt
1.5# Victory Malt
12 oz Carafa III
12 oz Chocolate
2 oz Centennial (7.8% AA) 60 min
2 oz Centennial (7.8% AA) 30 min
2 oz Centennial (7.8% AA) 20 min
2 oz Cascade (7% AA) 15 min
2 oz Cascade (7% AA) Flameout
2 oz Cascade (7% AA) Dry-hop 7 days
Wyeast 1056 American Ale

Procedure: 

Mash for 60 minutes at 152 degrees.

Fermentation: 

Rack onto yeast cake or use starter. Ferment at 68* for 10 days. Rack to secondary for 14 days.
