Description: 

A lager derived from my national heritage, this lager utilizes hops imported from Czechia and Poland. I wanted to create this recipe to give a shot at creating something that taste's like home to my father.

Ingredients: 

19# German Pilsner
1# German Carapils
2oz Lubelskie Hops
4oz Czech Saaz Hops
2 pack - Omega Yeast Labs - Bayern Lager OYL-114
80g Calcium Chloride - Water Softener

Procedure: 

Begin heating 14.5 gallons of water, add Calcium Chloride to adjust mash pH. Crush malts in mill while heating water (if not done so already). Heat water to strike temp. 162 degrees f. Strike water in 6.3 gallons. Mash 1 hour or until starch conversion is complete (i do a test). Fly or Batch sparge with 8.2 gallons of water. Boil 1 hour. Add Lubelskie hops at beginning of boil. Add Saaz Hops 30 minutes in boil. Chill to 55 degrees. Transfer to Carboys. Pitch yeast. Put in fridge.

Fermentation: 

Lager Fermentation. Couple weeks required. Will edit once found out time
