Description: 

This is the base recipe for a CHAOS barrel project. This base recipe will be brewed and then filled into a 31 Gallon Koval whiskey Barrel. This recipe is for an American-Style Barleywine, BJCP cat. 19C.

Ingredients: 

18 lbs Pale Malt, Maris Otter (3.0 SRM) 75.00 %
6 lbs Munich Malt (9.0 SRM) 25.00 %
1.00 oz Warrior [15.00 %] First Wort Hop 30.4 IBU
1.00 oz Warrior [15.00 %] (30 min) 21.2 IBU
2.00 oz Willamette [5.50 %] (5 min) 4.0 IBU
Irish Moss (5 min)
Yeast: US-05

Procedure: 

Mash at 151, Collect 5 Gallons. OG: 1.105 - 1.125, Target 1.118 FG: 1.018ish We are targeting 391 Billion Yeast cells. Two packets of US-05 will give you the correct pitch rate....or you may make a starter using any neutral American yeast strain.

Fermentation: 

Ferment on the lower side to keep esters at bay. If you are not fermenting in the brewhouse, keep your carboy temp at 67-68. If you are using the fermentation room at the Brew House, keep your carboy on the bottom shelf and towards the front of the room, away from the heater.
