Big ass wheatwine served at S&CN IV.

Ingredients: 

31lbs White wheat
2 oz Summit (60)
12lbs 2-Row malt
2oz Centennial (15)
2oz Centennial (5)
Your favorite American yeast cake from a smaller beer

Procedure: 

Best to do this on the ToP (ask an alchemist) with plenty of rice hulls on hand just in case. Mash low, mine was at 150 degrees. Inspiration from here: http://byo.com/hops/item/642-fine-wheatwine

Fermentation: 

OG above 1.090. Ferment out to terminal gravity, somewhere in the low 1.020's. Aged for a minimum of 2 months.
