How early do you start?  I want to come and observe the ToP in action but want to make sure I can be there from the beginning.

Jim,

I'm usually at the brewhouse at 5:00 and spend the first hour getting things set up and measured out.  We'll get the brewing process started around 6:00.

For the purposes of ToP demonstration the key is to be there for the mash and sparge, and also cleaning of the mash tun.  Once the boil is going it's no different than any other batch, and cleaning the kettle is pretty much identical to the mash tun clean up.

We'll be brewing this on on the ToP so this would be an ideal time for you or anyone else interestend in seeing it in action.
