The Sour Beer Symposium – the Art and Science of Blending

New Belgium’s 5-part Sour Beer Symposium series is making its Chicago stop at Bottom Lounge to kick-off another wood and funk FOBAB weekend.  The Symposium and Blending Workshop is hosted by New Belgium Brewing’s Wood Beer Blender/Brewer – Lauren Salazar and Wood Beer Specialist , Eric Salazar, at Bottom Lounge on Friday Nov. 15th.  There will two sessions lasting two hours, each session will host 50 guests.  First, the sour beer faithful will be taken through the art of blending beers in New Belgium’s cellar, from grain to glass, focusing on the blender’s art and technique used by Eric and Lauren.   Then folks will get lost in the woods – blending their own sour beer using unblended base beer samples from different foeders kept in the brewery’s cellar, mirroring the creation of La Folie.   Must buy tickets ahead of time through Bottom Lounge.
